I have a question, as someone who has used this in multiple projects and thinks its a well done asset--i still constantly run into issues with using spritesheets when I want to use outlines or shadows in which they get cutoff depending on how much space is around the sprite when its sliced. I sometimes get more space changing the Mesh Type to Full Rect, but still kind of makes spritesheets unusable. Do you have any tips for this? Thanks!

There's a Sprite Atlas Setup feature. You can read all about it in the Documentation and you'll also find a video tutorial linked.

It should yes, it will batch and all grass will take just 1 draw call if you set it up right
